I did find the filling rather thick, so I adjusted the ingredients for my next use. I halved the cake recipe since we didn't need a huge cake, so the two 6-inch pans worked perfectly. I make mine into a two-day process and except for the filling which needs to sit in the frige to "set up", I don't refrigerate it. It may be must my OCC or weirdness (lol) but if I were to make it any longer in advance, then, yes * I * would refrigerate it. Not an expert advice, just what I'd do. I understand we're not to make this on a rainy or overcast day, but since we both live in Florida - you'll know the answer to this........if we're in our "muggy" period, which is pretty much all summer, should I wait til winter to try this? Is it humidity that makes it un-doable?<br /><br />2nd question - the lady who wrote with such wonderful step-by-step instructions as to how she transferred the cake after making it in two 9X13 pans (vs three 8 or 9" pans)....did she use the same amt. of batter as if she had made it in the 3 smaller pans?<br /><br />Now I'm going to have to look for her transfer spatula.<br /><br />I'm not sure I can get back to this link, so if you could e-mail me with the answers to my questions - that would be wonderful.
