FREEZER FOODS FRIDAY

Ok, now, I decided to do a low-carb recipe today. I'm doing the low-carb lifestyle in 2010 and thought, why not make some low carb dishes freezer friendly. Ha! If you have any low-carb recipes you like, please, by all means, share!!! (smile)

Low Carb Sausage Muffins
1/2 lb bulk breakfast sausage
1/2 cup onion, chopped
1/2 tsp salt
1/4 tsp garlic powder
12 eggs
1/2 cup green pepper, chopped
1/4 tsp pepper
1/2 cup shredded cheddar cheese
In a skillet, brown the sausage, drain well.
In a bowl, beat the eggs.
Add onion, green pepper, salt, pepper, and garlic powder
Stir in the sausage and cheese
Spoon by 1/3 cupfulls into muffin cups sprayed with Pam
Bake at 350 degrees for 20-25 minutes, or until a knife inserted near the center comes out clean.
Total carbs: 3.3 grams for TWO muffins!



Ok, anybody want to add their ideas, tips, recipes for make ahead food? Remember, it doesn't have to be a FREEZER food, just something that you can make ahead.   3. I'm not a low-carber but I love high protein breakfasts. I make a similar recipe with turkey sausage and we love it, especially since it can be kept in the freezer and grabbed on a busy morning! Thanks for sharing!
