FREEZER FOODS FRIDAY

You all know that it's not just freezer foods, right? It's anything you can make ahead.  So, with that being said, what I'm going to share today is a coating for chicken!   Cornflake coating at that! 


Cornflake Coating for Chicken
9 cups cornflakes, crushed
1 envelope onion soup mix
1 Tablespoon garlic powder
1 Tablespoon dried parsley flakes
2 teaspoons rubbed sage
1 teaspoon seasoned salt
1 teaspoon paprika
1 teaspoon pepper

In an airtight container, combine ingredients.  Store in a cool, dry place.
This will keep up to 6 months!

Note:  When ready to prepare the chicken, use 4 boneless, skinless chicken breast halves.
Place 1 cup coating in a shallow dish.  Pour buttermilk into a pie pan or shallow dish;
coat chicken on both sides then dredge into cornflake crumbs - both sides.
Place in a greased baking dish.
Bake uncovered at 350 degrees for 309-35 minutes or until the juices run clear.

Also great on pork chops!

Easy Homemade French Dressing

Maybe it's the heat but I've been making "easy" and "quick" things lately!

Indulge me while I tell you a little story...

We love to visit Sarasota for one reason...the Mennonite restaurants!  My fave is Der Dutchman (the name has changed, but I can't remember it.  Besides, It will always be called that in my family).  We never order off the menu because they have a fabulous buffet.  That was always my dad's and my choice.  My sister's choice was Sugar n Spice, and it's totally for their French Dressing!  
On one trip, when she won, we went to Sugar N Spice and we both ordered salads.  She ordered her usual - French Dressing.  I ordered 1,000 Island.   Here's how the conversation went:
Her:  Get the French
Me:  But I don't like French.
Her:  Get the French.
Me:  I told you, I don't like it.
Her:  You'll wish you had.

So, I asked the waitress for my dressing on the side, and could I just taste the French.   I tasted and then told her I'd like to return the 1,000 and please bring me the French!   LOL

From then on, whenever we'd go to "Der Dutchman",  we'd have to stop by Sugar N Spice just to buy their homemade French dressing before returning home!  (They sell it in pint size canning jars.)

I've been trying to duplicate that dressing ever since.  Their's is much thicker than this one, but this one comes close.  (the smaller bottle of dressing in the pic at the top of this post, is the one I took to my sister to try and see if it passed her approval.   She approved!)

I'd like to share with you and if you make it, let me know what you think.  It's really easy and uses things you might already have on hand.    And while I'm at it... do you have a fave homemade salad dressing you do?  Please share!   Summer is here (in Florida it is!) and I'm looking forward to trying out some good salads!

Ok, here's the recipe....


Easy Homemade French Dressing
1 can (10 3/4 oz) condensed tomato soup, undiluted
1 cup sugar (I used Splenda!)
3/4 cup cider vinegar
3/4 cup vegetable oil
1 tsp salt
1 tsp pepper
1 tsp paprika
1 tsp ground mustard
1 tsp worcestershire sauce
1-2 tsp garlic powder,  or one clove garlic


Place the ingredients in a blender; cover and process until smooth and creamy.

Yep!  I'm using my fave blender - the Ninja!!!

Serve with salad. Store in refrigerator.
Yield: 3 1/4 cups dressing.

Cherry Limeade

Look out Sonic - I've made my own Cherry Limeade!



Since we are officially in the "hot" season, I thought I'd share my new fave -  Cherry Limeade!
The ingredients are oh, so simple...

6 oz jar of Maraschino cherries
6 oz. can frozen limeade, thawed and undiluted
1 cup water
2 cups lime flavored drink or sparkling water (I used diet Sierra Mist)
Use 1/3 cup of the juice from the Maraschino cherries; set aside 8 cherries (reserve the remaining cherries for another use - or drink! 
Combine the 1/3 cup cherry juice with the limeade concentrate in a pitcher. 
Add the 1 cup water.  Chill thoroughly
Add the lime, lemon-lime, or sparkling water just before serving.
Garnish with cherries. 
You can also garnish with lime slices too.
