Freezer Foods Friday!


It's Freezer Foods Friday again and this time I didn't forget! LOL  Did you happen to check in Wednesday and get the recipe I posted? The Apple Pecan Scones. Totally freezable!

But now for Friday's recipe...
I have two for you.  Both are chicken recipes.

Balsamic Marinated Chicken
1/2 cup balsamic vinegar
1/4 cup olive oil
1/2 tsp garlic powder
1/4 tsp pepper
4 chicken breast halves - skinned and deboned

In a large bowl, combine the marinade ingredients.  Add the chicken.  Place in a ziploc bag and freeze everything.

When ready to prepare, remove the chicken from the marinade, discard the excess marinade and grill for 8-10 minutes per side or until chicken is tender and no longer pink.

Now, I realize some of you reading this are saying, what?!  Grill???  It's snowing outside.  Not in Florida (teehee)  but I use my handy George Forman grill.  Because in Florida, the sunshine state translates to scorching heat state!  and I like my air conditioned state!

The next one is my fave!  It tastes more like Sweet and Sour Chicken but somebody named it Lemonade Chicken so we'll go with that.

Lemonade Chicken
4-6 pieces of chicken
1 six ounce can of frozen lemonade, thawed
1 TBSP. brown sugar
3 TBSP ketchup
1 TBSP vinegar

2 TBSP cornstarch
2 TBSP cold water

Once again you can put the chicken in a ziploc type bag with all the ingredients and freeze. 
When you want this for your meal, thaw in frige overnight. Place the chicken and mixture in the crock pot.  Cook on high 3-4 hours or low 6-8 hours.  Remove chicken from pot, cover to keep hot.
Transfer liquid to sauce pan.  Skin fat.
Combine cornstarch and cold water and add slowly to liquid, while stirring over low heat.
When thickened, serve with chicken over rice.

Some notes:  I've cut my chicken breasts up into chunks and thrown everything in the crockpot.  Turned out fine.   I've even   plopped in  the chicken mixture frozen without incident.  You just need to increase the time when you're starting from a frozen state.

  3. Wow - the lemonade one sounds especially good, never, ever thought of using it with food. Also love the idea that you can freeze the marinade with the chicken so when it de-frosts it re-marinates the chicken - yum and great tips!

  6. I've seen a lot of people talking about freezer foods but I haven't tried it myself. I think if I had a bigger freezer I'd be more prone to try it but I might try a small batch sometime soon. Thanks for the great recipes

    P.S. just as a foot-note here, next week I am going to a house party and asked what the wanted me to bring. I followed with a suggestion that I might bring an activity and ... a treat.

    I mentioned I have an ice cream maker and was going to make some "eggnog ice cream" and she LOVED the idea. So next weekend I will arrive with ice cream maker in hand, for those who wish to take a turn at turning the handle and being part of making some, and a large supply of eggnog ice cream, I will have already made-up this week, for the crowd.

    I love eggnog and making "ice cream eggnog" sounds like fun. Hope it turns out ok; I'll let you know ;-)
