More (freezable) Chicken Dishes!

Has it (really) hit anyone yet... this is Two Thousand...and TEN?????   It's hard for me to grasp right now.  Did anyone make any resolutions?  I did...and I don't usually.  One is a leaner/healthier 2010.  I told hubby if he wanted a carb laden meal, then he'd better get 'em at lunch time (at work).  He said he's on board! WooHoo.   And I am hoping for a more simplified life and slowing down to actually enjoy friends and family more.  A year where I throw things away less.  I've been increasingly aware this year, more than others, I have just tossed things out (food) because I never used it up.  Such waste.    Ok, speaking of wasting food,(lol) brings me to preparing things ahead, i.e. "freezer foods friday" !

I have a yummy and yet easy chicken dish for Sweet & Spicy Chicken.
I usually cut up the chicken (to make it go farther), but you can do this to whole or half chicken breasts too. 
I don't have a picture for you because it's on my "to do" list for this coming week.  (I just bought a bunch of chicken breasts and will be making several servings of this, plus a bunch of chicken pot pies next week)
Here goes...

Sweet and Spicy Chicken (don't let that scare you, it's not HOT)
1 packet of Taco seasoning mix
1 (8 ounce) jar apricot jam
1  (12 ounce) jar salsa
2 cups cooked chicken - cut into chunks

Combine the first three ingredients. 
Mix with chicken.
Pour into ziploc type bags and freeze.  OR you can cook and then freeze. Your choice.
(Depending on how much time I have during my "freezer sessions" I'll just bag it and freeze it,  or if the oven is free, I'll bake it until the chicken is totally done, and then freeze. ) If you choose to freeze "raw", then you'll want to thaw in the frige the day before baking.  Cook at least 35-40 minutes (depending on if you cut the chicken up or used whole breasts).  The chicken is done if the juices run clear, and you can pull apart the meat easily.

Serve over white or yellow rice.

NOTE:  This also works with bite-size pieces of pork or beef!
and, for an added treat, (again, depending on how much time I have and...of course, my mood! LOL  I'll saute some green peppers and onions to add to the mix!

And, as always, I'd love to hear if you try this and if you "tweaked" it any to suit your family's tastes!
