FREEZER FOODS FRIDAY Hot weather, Cool treats!

It's hot and I'm not much in the mood for heavy foods, so I'm still thinking hot-weather, cool summer treats! 
How about these two?  (totally freezables!)



Rocky Road Fudge Pops

1 pkg (3.4 oz) cook-and-serve chocolate pudding mix
2 1/2 cups milk
1/2 cup chopped peanuts
1/2 cup miniature semisweet chocolate chips
12 plastic or paper cups (3 oz size - you know, those Dixie cups)
1/2 cup marshmallow creme
12 popsicle sticks

In a microwave-safe bowl, combine the pudding mix and milk. Nuke, uncovered on high for 4-6 minutes or until bubbly and slightly thickened, stirring every 2 minutes.   Cool for 20 minutes, stirring several times.
Meanwhile, combine peanuts and chocolate chips; place about 2 Tablespoons in each cup.   Stir marshmallow cream into pudding; spoon into cups.  Insert popsicle sticks; cover and freeze.
(these keep about 3 months in freezer)




Orange Popsicles

1 pkg (3 oz) orange gelatin
1 envelope (.15 oz) unsweetened orange Kool-Aid type drink mix
1 cup sugar
2 cups boiling water
2 cups cold water
16-18 Popsicle molds or paper cups (3 oz each)
16-18 Popsicle sticks

Dissolve the gelatin, Kool Aid and sugar in boiling water.  Stir in the cold water.
Pour into molds or cups.  Top mold with holders or insert sticks into cups, then cover.
Freeze.

  2. Wow, on these hot summer days I'm sure they are a big hit. So glad you are back to doing your freezer foods linky party as I have been holding on to this post for a couple of weeks. I have just about the only meal I make ahead and freeze posted here. My stuffed shells. Great way to sneak in some spinach too. Thanks for hosting!!

  5. The orange popsicles recipe reminded me so much of "freezer" cups I had growing up, I had to try it! I followed recipe except I used cherry gelatin, cherry kool-aid, 5 oz cups and replaced the 2 cups cold water with 2 cups pineapple juice. Absolutely like I remembered. Thank you so much for sharing!
