Tonight's meal was an oldie but definitely a goodie! Oven stew. This cooks FIVE hours! I used to put it in the oven, but now it's just easier (and a lot cooler in the kitchen!) to use my Nesco Roaster my mom got me for Christmas a ga-zillion years ago. It's so easy - I thought I'd share!
It's really called "Gone All Day Stew"
1 can tomato soup - undiluted
1 cup water
1/4 cup all purpose flour
2 lbs. beef chuck cut into 1 to 2 inch cubes
3 medium carrots - cut into 1 inch diagonal slices (I used abt. a half a bag of baby carrots)
6 onions, quartered
4-5 potatoes, cut into 1 1/2 inch chunks
3 beef bouillon cubes
1 TBSP Italian herb seasoning
2 bay leaves
fresh ground pepper
Mix the soup, water and flour until smooth.
Combine with all the other ingredients in covered roasting pan.
Bake at 275 degrees for 4-5 hours.
