It's Freezer Foods Friday!!! This one is a really simple dish adapted from a Pampered Chef recipe....
Parmesan Chicken Nuggets
1 1/2 cups CRUSHED seasoned crutons
1/3 cup grated FRESH parmesan cheese
1 teaspoon diced parsley
1/4 teaspoon garlic salt
2 egg whites
1 tablespoon water
1 lb. boneless, skinless chicken breasts cut into "nugget" size
Put crushed crutons, parmesan cheese, parsley, and garlic salt into a plastic bag.
Whisk egg whites and water. Dip the chicken into the egg and then into the bag of crumb mixture to coat. Shake 'em up good.
Bake 14-16 minutes at 450 degrees until fully cooked. Cool. Place on cookie sheet and put in freezer to freeze, then transfer to a freezer bag for easier storage.
On serving day, place frozen nuggets on a cookie sheet and bake at 350 degrees for 20 minutes.
Note: By placing the chicken nuggets on a cookie sheet and initially freezing before putting in the freezer bags, you are doing a "home version" of flash freezing. They will be individually frozen and shouldn't be just a glob stuck together in the freezer bags. LOL
